01Geographic & Texture Profile

  • Primary Geographic Zone: Province of València (spring home cooking).
  • Liquid & Texture Profile: Seco (dry). Baked 18–20 min.
  • Traditional Cooking Vessel & Fuel: A flat earthenware cassola in the oven.

02Historical & Cultural Context

The spring version of arròs al forn. Instead of the winter chickpeas and cocido leftovers, it uses fresh peas (and optionally broad beans) from the huerta, cooked first in salted saffron water that then becomes the rice's stock. The usual sausage trio (botifarra, blanquet and pork belly) stays, plus 6–7 alls tendres (young garlic). It shows the seasonal logic of the baked-rice family: the vessel and oven stay the same, and the huerta decides the rest.

Culinary science: pea-cooking water is sweet and starchy, a light vegetable stock. Frying the rice with the garlic and paprika before it goes into the cassola seals the grains, so they stay separate in the oven.
