Seco · dry Cooked in Clay casserole Valencia Sources (4)

01Geographic & Texture Profile

  • Primary Geographic Zone: Province of València. Recorded in Valencian home cookbooks, with a vigil variant in Tavernes de la Valldigna (La Safor).
  • Liquid & Texture Profile: Seco (dry). Baked dry in about 20 minutes.
  • Traditional Cooking Vessel & Fuel: A flat earthenware cassola, soaked beforehand, in an oven at 220–250 °C.

02Historical & Cultural Context

The Lenten twin of arròs al forn. It is an arròs viudo ("widowed rice") "que no se acompaña de ninguna carne", in which raisins and chickpeas replace the pork, sausages and morcilla. Valencia Bonita calls it "un plato típico de Cuaresma", little known in many comarques. The recipe it publishes comes from the aunt of Salvador Gayá Sastre. A Universitat de València recipe collection also records arròs al forn amb cigrons i panses, cooking the rice in the chickpea liquid and frying the raisins in the oil first.

In Tavernes de la Valldigna the same base becomes the arròs de vigília, with salt cod and cod meatballs (mandonguilles de bacallà) added.

Culinary science: frying soaked raisins briefly caramelises their sugars, giving a sweet-savoury depth that stands in for meat. Half the raisins go in at the start and half on top, so some melt into the broth and some stay plump. Chickpea cooking water carries starch and savour into the rice.

03Local Town-by-Town Variations

  • Valencia Bonita family recipe: Crushed garlic fried and removed. Half the raisins + 125 g grated tomato + chickpeas + 1 tbsp pimentón de hojilla, then rice, the fried garlic, and broth (total ≈ 2× the rice volume). The rest of the raisins on top. 220–250 °C, about 20 min.
  • Universitat de València collection: Chickpeas boiled with saffron in 1 L of water. Raisins fried in oil, then the rice. Baked with about 700–750 g of chickpea liquid.
  • Tavernes de la Valldigna (arròs de vigília): The same, plus bacallà and mandonguilles de bacallà. ⚠️ The full local recipe isn't published online.
  • Ontinyent echo: In Ontinyent arròs al forn is the protagonist of the Puríssima festivities and is called cassola. ⚠️ No raisin attribution found there.
