01Overview

Jordan's rice cooking grows out of three overlapping traditions: the Bedouin of the desert east and south (herds, milk, meat, bread baked on the saj), the fellahin of the northern and western highlands (wheat, bulgur, olive oil, vegetables), and the urban kitchens of al-Salt, Irbid and later Amman, shaped by Damascus, Jerusalem and Nablus. Rice was not native to any of them. It arrived as a traded grain and, during the 20th century, gradually displaced bulgur as the festive grain. Sources date the shift anywhere from the late 19th century to the 1950s.

The national dish, mansaf, brings these worlds together: lamb from the herds, jameed (sun-dried, salted yogurt, above all from al-Karak) from the Bedouin and village dairy, shrak bread, and rice. In 2022 UNESCO inscribed it on its list of the Intangible Cultural Heritage of Humanity. The Bedouin south adds the pit-oven feast, zarb. Everyday Jordanian home cooking shares the wider Levantine repertoire: maqluba (the upside-down rice also central to Palestinian cooking, see Palestine), vegetable stews (yakhni) such as okra or green beans served over rice with vermicelli, and stuffed vegetables. On the Red Sea, Aqaba's signature dish is the fish-and-rice sayadieh, with rice browned with onions and cooked in fish broth.
