01Overview
The middle Ebro valley grows rice along the lower Cinca and the Ebro (Huesca and Zaragoza paddies), but its rice cooking is stew-based: rice is added to cazuelas, rabbit and snail stews and vegetable dishes rather than cooked in a flat pan. Signature elements include borraja (borage, Aragón's emblematic vegetable), the chilindrón pepper base, snails (a Riojan Christmas Eve and festival food), steppe rabbit, and the region's olive oils and wines (with sarmiento fires in wine country). The Revista Española de Nutrición Comunitaria supplement on Aragón's forgotten dishes records a pastoral rice-and-stew culture, including colas de cordero (Good Friday lamb tails, with rice as a variant) and the now-forbidden Monegros arroz con fardacho (ocellated lizard, a protected species, documented only as history and not given a recipe here).
