La Meseta Sur y las Vegas del Guadiana

01Overview

These are two inland regions with very different relationships to rice. Extremadura is Spain's second rice producer, after Andalucía. The Vegas del Guadiana (Vegas Altas and Vegas Bajas) irrigate more than 25,000 ha of paddy. Castilla-La Mancha grows almost none, but its game culture (hare, partridge, rabbit) and its Lenten salt-cod tradition shape the rices it does cook. In the Albacete Sierra, a milk-free Christmas arroz con miel survives as a documented forgotten dish. The flavour markers are pimentón de la Vera (Extremadura), saffron from La Mancha (D.O. Azafrán de La Mancha), holm-oak fires and dehesa game.
