Arroz y Pollo con Alcaciles

Murcian rice with chicken and artichokes

Arroz Huertano de Pollo y Alcachofas

Seco · dry Cooked in Paella pan Murcia Sources (1)

01Geographic & Texture Profile

  • Primary Geographic Zone: La Huerta de Murcia.
  • Liquid & Texture Profile: Seco (dry). This is my classification: the chicken is covered with water and boiled, the rice cooks 15–20 min, then rests.
  • Traditional Cooking Vessel & Fuel: A paella or wide pan on the stove.

02Historical & Cultural Context

Alcacil (from Andalusi Arabic al-qabsil) is the Murcian and Andalusian word for artichoke, and the huerta grows some of Spain's best. This everyday rice pairs half a farmyard chicken with artichokes, red and green peppers and tomato. It is recorded by the Federación de Peñas Huertanas in the Ayuntamiento de Murcia's cookbook Un paseo por la huerta. The artichokes are dropped into water with chopped parsley so they don't darken. This Murcian alternative to the Valencian lemon-water trick is recorded in the cookbook.

Culinary science: artichoke polyphenols oxidise when cut. Acidulated or herb water slows the reaction, and frying the pieces separately before they meet the rice sets their colour and caramelises their edges.
