Arroz con Alcachofas de Benicarló

Rice with Benicarlo artichokes and pork

Arròs amb Carxofes de Benicarló

Seco · dry Cooked in Paella pan Castellon Sources (6)

01Geographic & Texture Profile

  • Primary Geographic Zone: El Baix Maestrat (Benicarló, Vinaròs, Peníscola, Cálig), extending south into La Plana Alta.
  • Liquid & Texture Profile: Seco (dry), the classic paella form. Local restaurants also serve it meloso; see §3.
  • Traditional Cooking Vessel & Fuel: A steel paella over wood or gas, or a clay cassola.

02Historical & Cultural Context

The Alcachofa de Benicarló has held a Denominación de Origen since 18 September 1998. It is a rounded, compact, tender Blanca de Tudela-type artichoke that grows in the mild coastal plain between the Serra d'Irta and the sea. Every January Benicarló celebrates the Festa de la Carxofa with tastings, and local restaurants make artichoke rice in seco, meloso and caldoso versions. The Generalitat notes that the traditional paella "admits the seasonal Benicarló artichoke very well". In the Baix Maestrat the artichoke rice ranges from inland pork-and-artichoke paellas to coastal versions with galeres (mantis shrimp; see recipe_arroz_con_galeras_y_alcachofas.md) or boquerones.

Culinary science: artichoke contains cynarin and chlorogenic acids, which make other foods taste sweeter afterwards and turn brown through polyphenol oxidation. Frying the artichoke pieces first, in plenty of oil, until their cut faces caramelise reduces the oxidation and adds nutty Maillard notes. Lemon on the cut surfaces delays browning before cooking.

03Local Town-by-Town Variations

  • The Benicarló Style: Artichoke-forward, with pork (magro or ribs) and sometimes sepia. Artichokes in quarters, fried until golden. Seco.
  • The Vinaròs Style: Artichoke + galeres or llagostins (seafood-leaning). Often meloso. Fish stock.
  • The Peníscola Style: Artichoke + boquerones or sepia + ajos tiernos. Seco.
  • The Inland Baix Maestrat (Cálig, Sant Jordi) Style: Artichoke + rabbit or pork ribs, sometimes habas. Paella-valenciana frame.
