01Overview

Syria's kitchen has two great poles. Damascus (al-Sham) cooks in a register close to Lebanon, Palestine and Jordan: restrained spicing, cumin and safflower in fillings, rose and orange-blossom water in sweets. Aleppo (Halab), long a caravan and trading city with Turkish and Armenian influence, is described as more heavily seasoned, especially with red pepper (the famous Aleppo pepper and pepper paste). It uses tomato paste and sour notes (sumac, pomegranate molasses, tamarind) in its stuffed vegetables, and many vegetables are cooked in yogurt. Aleppo's food is often called the culinary heart of the country.

Between and beyond them sit distinct regional kitchens. Homs and Hama are known for their pastries and sweets; Homs is also known for flat, pastry-like kibbeh, and Hama for the quality of its yogurt dishes. The coast (Latakia, Tartus) adds fish and its own kibbeh techniques. Hauran in the south is wheat country. The Euphrates valley and the Jazira (Deir ez-Zor, Raqqa, Hasakah) lean on bread-and-broth tharid dishes rather than rice.

Rice vs. bulgur. Cracked wheat (burghul), along with freekeh, is Syria's everyday grain: kibbeh, tabbouleh, mujaddara made with bulgur, bulgur pilafs. Rice is the grain of hospitality and celebration. It is the stuffing of vegetables and vine leaves, the bed for yogurt stews, the filling of the wedding ouzi, and the base of milk puddings. Vermicelli rice (ruz bi-sh'ariyyeh) is the standard accompaniment.
