01Overview
Castilla y León grows no rice, yet rice is woven into its matanza (pig-slaughter) culture. The most famous example is the arroz a la zamorana, documented since an 1884 almanac describing a rice served in Alcañices. Rice also appears in the region's offal stews (Salamanca's chanfaina), in the river crayfish tradition of La Bañeza, in Lenten legume pots, and above all inside its charcuterie: the rice morcillas of Burgos and of Villada (Tierra de Campos), where rice cooked with onion is mixed with blood, lard and spices. The Revista Española de Nutrición Comunitaria's 2022 survey of forgotten dishes of Castilla y León records several of these village rices.
