⚠️ Source-confidence note: documented only in the Revista Española de Nutrición Comunitaria's 2022 survey of forgotten dishes of the Valencian Community (photo credited to writer and documentarian Eduardo Boix López). The source gives no town or comarca. The geographic attribution and the variations below are my inference: offal of fighting bulls was traditionally distributed after bous al carrer and bullfight festivities. Treat them as hypotheses to check locally.

01Geographic & Texture Profile

  • Primary Geographic Zone: Not specified by the source. Probably bull-festival towns of the Valencian Community (⚠️ inferred).
  • Liquid & Texture Profile: Meloso (creamy). The source states the rice "has to end up with a creamy consistency".
  • Traditional Cooking Vessel & Fuel: A paella (the source cooks it in a paella).

02Historical & Cultural Context

This is an offal rice: liver, sweetbread (molleja), heart and entrañas of a bull, stretched with chickpeas and a large amount of escarole. The RENC places it among the Valencian Community's "forgotten dishes or dishes of occasional consumption". It belongs to the aprovechamiento (nothing-wasted) culture that also produced arròs al forn and arroz con pata de ternera.

Culinary science: liver toughens and turns grainy when overcooked, because its proteins set at relatively low temperatures. The source fries the offal briefly with guindilla (chilli) at the start, then lets it finish gently in the broth. Escarole contributes bitterness to cut through the iron-rich offal, and it wilts down drastically, so it is added "in large quantity".

03Local Town-by-Town Variations

  • The RENC version: Liver + sweetbread + heart + entrañas, guindilla, escarole, chickpeas, pimentón, saffron. Broth ≈ 2× the rice. Meloso.
  • Other towns: ⚠️ No documented variants found. Plausible substitutions in modern kitchens include beef or pork liver, but these are not attested.

04The Master Recipe (4-Person Batch Blueprint)

Variant represented: RENC 2022 (quantities as published).

The Flavor Base (El Fondo)

Ingredient Quantity
Bull liver 100 g
Sweetbread (molleja) 100 g
Heart 100 g
Entrañas 70 g
Olive oil 60 ml
Guindillas (dried chillies) 1–2
Garlic 1–2 cloves
Tomato, grated 100 g

Escarole, chopped 1–2 heads
Cooked chickpeas 400 g

Assembly Ratios

Element Quantity
Rice 400 g
Water ≈ 2× the rice volume (≈ 0.8–1 L)

Step-by-Step Cooking Blueprint

  1. Fry: Heat the oil in the paella. Add the offal in medium pieces with the guindilla. Fry, the liver last, then add a little salt.
  2. Sofrito: Add the garlic, then the tomato and pimentón at once.
  3. Escarole: Add a lot of it; it will reduce sharply.
  4. Broth: Add the water (≈ 2× the rice), the ground saffron and the chickpeas. Boil 15 min.
  5. Rice: Distribute it evenly. Boil hard for the first minutes, then lower the heat until done, aiming for a meloso finish.
  6. Finish: Serve immediately.
