01Geographic & Texture Profile
- Primary Geographic Zone: L'Horta de València, La Ribera, La Safor, and the inland comarques (Camp de Túria, Los Serranos). Variants exist in La Marina Alta (Dénia) and the Alcoià.
- Liquid & Texture Profile: Caldoso (soupy). Eaten with a spoon. The broth should be trabado (lightly bound by starch).
- Traditional Cooking Vessel & Fuel: A tall clay olla or iron caldera, started early on a wood stove (foc a terra). Pressure cookers are the modern shortcut.
02Historical & Cultural Context
This is the great winter rice of the Valencian countryside. It is also known as caldera, caldera de l'horta, olla pobre or arròs junt. It comes from the pig-slaughter season (la matança), using pork trotter, ear, belly and fresh morcilla or botifarra, combined with dried white beans and the yellow turnip (nap groc, the Valencian heirloom "nap de pebre"). The turnip gives the broth its earthy-sweet, mustardy note and pale amber colour. The dish is effectively an olla in which the rice is cooked directly at the end, instead of a separate soup and pilota. The chef Héctor Medina argues it should not rest: it is moved so that the rice releases starch and the broth binds.
Culinary science: pork trotter and ear are rich in collagen, which converts to gelatin over 1.5–2 hours of simmering. Combined with starch from the beans and rice, this gives the broth its glossy, lip-sticking body. Yellow turnip contains glucosinolates, which soften into sweet-bitter notes with long cooking. Pimentón is added to hot oil and then quenched, so it releases its colour without burning.
03Local Town-by-Town Variations
- The L'Horta / Valencia City Style: Pork trotter (peu), ear (orella), belly, morcilla de ceba, sometimes beef. White beans (fesol blanc) + nap groc. Pimentón + saffron. Rice cooked in the broth for 15–17 min.
- The La Safor / Ribera Style: Adds cardo (cardoon) or penca (chard stalks) in winter, and sometimes carlota (carrot). Some Ribera households fry the rice briefly first.
- The Interior (Camp de Túria / Serranos) Style: Adds blanquet and chorizo from the matança, heavier on pimentón. Cooked in a deep caldera over wood.
- The Dénia / Marina Alta Style: Known locally as arròs amb fesols i naps, with chicken added. In Dénia's caldoso rice tradition it is lighter, with a clearer broth.
- The Alcoi / Alicante interior echo: Close to the olleta family. White beans, turnip and pork, but the cereal is often wheat or rice.
04The Master Recipe (4-Person Batch Blueprint)
Variant represented: L'Horta de València (pork matança cuts + nap groc + white beans).
The Flavor Base (El Fondo)
| Ingredient | Quantity |
|---|---|
| Dried white beans (fesols blancs), soaked 12 h | 250 g |
| Pork trotter (peu de porc), split | 1 (≈ 400 g) |
| Pork ear (orella), optional | 1 (≈ 200 g) |
| Pork belly (cansalada) | 250 g |
| Beef shin (optional) | 200 g |

| Olive oil | 50 ml |
| Garlic | 2 cloves |
| Pimentón dulce de la Vera | 4 g |
| Saffron | 0.2 g |
| Water | 3 L |
| Salt | to taste |
Extraction:
- Blanch the trotter and ear for 5 min, drain and rinse (this gives a cleaner broth).
- In the olla, combine the beans, trotter, ear, belly, beef and 3 L of cold water. Bring slowly to a boil and skim. Simmer gently for 1 h 15 min (or 25 min in a pressure cooker).
- Add the turnip and cook for 20 min more.
- In a small pan, warm the oil, fry the sliced garlic, then off the heat add the pimentón for 5 s and pour it straight into the olla. Add the saffron and the morcilla (whole). Simmer 10 min.
- Lift out the meats, bone the trotter, and chop everything into bite-size pieces. Return them to the pot. You should have ≈ 2 L of broth. Correct the salt.
Assembly Ratios
| Element | Quantity |
|---|---|
| Short-grain rice | 320–350 g |
| Broth | ≈ 2 L (≈ 6:1, caldoso) |
| Beans (cooked) | ≈ 550 g |
| Meats | ≈ 1.2 kg gross |
Step-by-Step Cooking Blueprint
- Preparation: Soak the beans the day before.
- Fondo: As above, about 1 h 45 min total.
- Rice Addition: Bring the broth to a lively boil and add the rice.
- Fire Manipulation: Strong simmer for 15–17 min. Stir gently every few minutes to release starch and bind the broth.
- Finish/Resting Phase: Serve immediately. Don't rest it, because the rice keeps drinking the broth. Serve in deep bowls with a piece of each meat and a slice of morcilla.
