Nomenclature trap: in the Murcian huerta, "pava" here means cauliflower, not turkey. The cookbook's ingredient list gives "1 coliflor", and its method says "limpiamos los ajos y la pava". Don't confuse it with the Vega Baja turkey rice, arroz con pava.

01Geographic & Texture Profile

  • Primary Geographic Zone: La Huerta de Murcia.
  • Liquid & Texture Profile: Seco (dry). This is my classification: the cookbook boils the rice 15–18 min with the anchovies laid on at the end, then rests it.
  • Traditional Cooking Vessel & Fuel: A paella on the stove or over wood.

02Historical & Cultural Context

A huerta rice that marries the cheapest Mediterranean fish, the boquerón (fresh anchovy), with winter cauliflower, two bunches of ajos tiernos and red pepper. It is recorded by the Federación de Peñas Huertanas in the Ayuntamiento de Murcia's cookbook Un paseo por la huerta. It is the Murcian sibling of the Valencian arroz de boquerones y espinacas and of the Vega Baja's Lenten artichoke-and-anchovy rice.

Culinary science: cauliflower's sulphur compounds turn sweet and nutty when fried before boiling. Frying it in the same oil as the peppers and garlic flavours the oil, and the anchovies go in only for the last 5 minutes.

03Local Town-by-Town Variations

  • Huerta de Murcia (Peñas Huertanas): Boquerones + cauliflower + ajos tiernos + red pepper + tomato + saffron.
  • Vega Baja (Alicante): Artichokes instead of cauliflower in Lent; see arroz de verduras de la Vega Baja.
  • ⚠️ Other Murcian towns are not documented.
