  • Liquid & Texture Profile: Meloso (creamy). It is served slightly brothy and firms up to a creamy texture as it rests.
  • Traditional Cooking Vessel & Fuel: A paella or deep pan over gas or wood.

02Historical & Cultural Context

The Ebro Delta is Catalonia's rice bowl, protected by the D.O.P. Arròs del Delta de l'Ebre. Its traditional dishes come from the wetland itself: duck from the lagoons, eel from the channels, snails from the banks, and "conill de canyar" (reed-bed rabbit). According to Surt de Casa, the arròs a banda or arròs de ribera is "a typically Delta formula with snails, eel and duck". Delta menus also list a paella deltebrenca with eel, langoustine, rabbit and duck. The D.O.P.'s regulatory council once ran a competition to find the most traditional recipe and concluded that "there are many, many recipes".

Culinary science: eel is very fatty and full of collagen. Added after the duck has browned, it gives the rice a silky, creamy texture. Duck browned slowly in its own fat releases flavour into the sofregit, and the snails add earthiness.

03Local Town-by-Town Variations

  • Poblenou del Delta (Ca'l Faiges, a long-standing house for arròs de ribera): Sofregit of green pepper, tomato and onion. Duck browned slowly until golden, then eel, then snails. Served slightly brothy.
  • Deltebre: The paella deltebrenca combines eel + langoustine + reed-bed rabbit + duck.
  • Amposta: ⚠️ Arròs amb anguiles (eel rice) as a stand-alone signature dish, according to the Ruta de la Sega festival listing. Details unverified.
  • Arròs a banda (Delta usage): Here the name can also mean a dry rice cooked in fish and shellfish broth, which is a different dish from the duck rice.
