01Overview
The Balearic Islands grow almost no rice, but they have their own rice cooking. It is mostly caldós (soupy) and spiced, and it comes from the winter pig slaughter (matances) and the fishing boats. Mallorca's emblem is the arròs brut ("dirty rice"), whose spice-and-liver picada clouds the broth. Eivissa's equivalent is the arròs de matances. Menorca built its rice on the caldereta de llagosta of Fornells. Across the islands, fishermen's bullit de peix (fish boiled with potatoes) is followed by rice cooked in its broth.

False friend: Menorca's arròs de la terra ("rice of the land") contains no rice. It is coarsely ground wheat baked with butifarrons, sobrassada, pork ribs and sweet potato, traditionally on pig-slaughter day, and is described as an Arab-heritage dish (Descobreix Menorca – Country rice). It is not listed as a rice recipe.
