Arròs Negre de l'Empordà

01Geographic & Texture Profile

  • Primary Geographic Zone: The Empordà coast (L'Escala, Roses, Palamós) and the rest of the Catalan coast. TasteAtlas notes its popularity in Tarragona.
  • Liquid & Texture Profile: Seco (dry). Some Empordà cassola versions are cooked slightly melós.
  • Traditional Cooking Vessel & Fuel: A paella or earthenware cassola over gas or wood.

02Historical & Cultural Context

Barcelona Turisme lists "Arròs negre de l'Empordà" among its Catalan classics. The Catalan version has the same base as the Valencian arròs negre: cuttlefish or squid, fish stock and ink, served with allioli. The main difference is the sofregit. A La Columna (Girona) article recalls that the original dark colour came from a very dark onion sofregit, and that ink only became the usual colouring later. Barcelona Review similarly describes the flavour as coming from cuttlefish, stock, onion and ink, with no herbs. Valencian versions, by contrast, use no onion.

Culinary science: onion cooked slowly for 30–40 minutes caramelises (Maillard reactions plus caramelisation of its sugars) into an almost black paste. That paste gives colour and a bitter-sweet depth, which ink later intensified. Some cooks mix ink into the allioli (allioli negat); that detail comes from a less reliable source.

03Local Town-by-Town Variations

  • Empordà (L'Escala / Roses): Very dark onion sofregit + cuttlefish + ink. Allioli made in a mortar. Sometimes clams (goodtaste.tv recipe).
  • Barcelona: Squid more often than cuttlefish. Shorter sofregit, ink-led colour.
  • Tarragona coast: ⚠️ reconstructed. Lighter sofregit, closer to the Ebre and Castellón style.
  • How it differs from the Valencian negre: onion sofregit (Catalunya) versus garlic, tomato and pebre roig (Valencia).
