Arroz de Pals a la Cazuela

Pals rice in a clay casserole with seafood and meat

Arròs de Pals a la Cassola (Empordà)

Meloso · creamy Cooked in Clay casserole Catalonia Sources (6)

⚠️ Source-confidence note: "Arròs de Pals" is sold under the Productes de l'Empordà guarantee mark. I could not confirm an IGP (protected geographical indication) in any source. No canonical recipe was found either: the Pals tourism office names arròs a la cassola as the town's most traditional rice, and the recipe below is reconstructed from Catalan cassola practice.

01Geographic & Texture Profile

  • Primary Geographic Zone: Baix Empordà (Girona): Pals, Torroella de Montgrí, L'Estartit, Palamós. The paddies sit on the right bank of the Ter, beside the Montgrí natural park.
  • Liquid & Texture Profile: Meloso (creamy). Pals rice stays loose rather than sticky.
  • Traditional Cooking Vessel & Fuel: An earthenware cassola on a wood or gas stove.

02Historical & Cultural Context

Rice has a long and interrupted history in Pals. A Catalan study dates the town's rice mill to 1452. Cultivation expanded in the 16th and 17th centuries, but outbreaks of disease (malaria, from the flooded paddies) caused conflict, and growing was abandoned in 1838. Planting was allowed again around 1900, and the landowner Pere Coll i Rigau drove its revival. Today roughly 640–710 ha are cultivated. The rice is sold as "Arròs de Pals", extra quality, under the Productes de l'Empordà mark, and the town holds an annual "Pals i la Cuina de l'Arròs" campaign. According to the Pals tourism office, the town's most traditional rice dish is arròs a la cassola, an Empordà mar i muntanya (sea and mountain) rice.

Culinary science: sources describe Pals rice as holding its shape and staying loose, which suits the Empordà cassola. It absorbs the sofregit and picada without breaking into a porridge.

03Local Town-by-Town Variations

  • Pals (documented): Arròs a la cassola as the town's signature dish.
  • Palamós (cuina de barca, the fishermen's cooking): A cassola made with the day's catch from the Palamós fish auction, demonstrated at the Espai del Peix and the Museu de la Pesca.
  • ⚠️ Reconstructed Empordà mar i muntanya: Chicken or rabbit + sausage (botifarra) + squid + prawns, with a picada of almond and chocolate is sometimes cited for Empordà sauces generally (unverified for rice).
