01Geographic & Texture Profile

  • Primary Geographic Zone: L'Alacantí (Alicante city). The gamba roja (red prawn) is the prize of the Alicante–Dénia–Santa Pola fleets.
  • Liquid & Texture Profile: Seco (dry). An oven pass and a final socarrat burst.
  • Traditional Cooking Vessel & Fuel: A paella on gas or wood, with a brief oven pass at 180 °C.

02Historical & Cultural Context

A modern Alicante classic in the "Ciudad del Arroz" canon. It combines two luxury catches: monkfish (rape, Valencian rap), a firm, gelatinous fish that holds its shape, and red prawn, whose heads hold an intensely flavoured coral. The technique is nose-to-tail. Monkfish head and skin, and the prawn heads and shells, are sautéed and removed to strengthen the fond. The raw prawn heads are squeezed to make an allioli with confit garlic, which is stirred in at the end.

Culinary science: monkfish collagen dissolves quickly. Adding the diced tail only 5 minutes before the end keeps it juicy. Prawn-head juice is rich in enzymes and fat-soluble carotenoids (astaxanthin). Emulsifying it raw into allioli captures aromas that boiling would drive off.

03Local Town-by-Town Variations

  • Alicante city (Ciudad del Arroz): Salmorreta + ajos tiernos, 17 min (3 min high, then medium), oven at 180 °C, socarrat burst, prawn-head allioli.
  • Older coastal versions: Monkfish also appears in caldoso form in Valencian home cooking, e.g. the arrossos caldosos amb peix family (rap variant) of a Universitat de València recipe collection. ⚠️ Not town-attributed.

Step-by-Step Cooking Blueprint

  1. Prep: Dice the monkfish tail and slice the thick part. Peel the prawns and squeeze the raw heads for juice, then blend it with confit garlic and EVOO into allioli.
  2. Fond: Sear the monkfish slices (set aside for plating). Briefly fry the remaining monkfish trimmings and the prawn heads and shells, then remove them.
  3. Base: Gently sweat the ajos tiernos without browning. Add the salmorreta, then the stock.
  4. Rice: At the boil, rain in the rice with salt. 3 min high, then medium.
  5. Fish: 5 min before the end, add the diced monkfish, prawn tails and saffron.
  6. Oven and socarrat: Pass through the oven at 180 °C to dry the surface, then give it a few seconds on maximum heat. Stir in the allioli on serving. Total rice time ≈ 17 min.
